Saturday was my last day in NYC before a quick 5-day trip to Tulum I booked last minute! Went to Odessa for some pancakes and bacon. If the weather wasn't going to improve, I decided it was time to leave the beach-town of Placenia and check out another part of Belize. I decided on San Ignacio, a town up in Belize's Cayo District, the country's mountainous rainforest region near the western border shared with Guatemala. I had a bunch of time before my 2pm bus, which I tried to fill with this delicious breakfast by the water's edge. Mmmm. ...headed over to Odessa for pancakes and mantalk. Celebrated my day off on Friday with breakfast-for-lunch. ...their insane malawah dish. Crispy layers of Yemenite fillo dough topped with 2 eggs served with spicy puree of tomatoes.
